How to prepare Badaami Kheer!

Kheer is one of the desserts that was famous in the subcontinent centuries ago, even today its popularity is still the same. It is famous among people of all ages whether male or female. On special occasions like; eid-ul-fitar, and dinner parties Kheer is served as the dessert to conclude the wholesome meal. Let us learn how to prepare amazing “Badaami Kheer”. Ingredients used are;

Milk                                    4 ltrs

Almonds                      200g, boiled and 10 to 12, sliced and skinned

Green cardamom         1 tsp, powder

Milk solids (Khoya)     400g

Pistachio                        10 to 15, sliced

Rice                                 6 tbsp (washed & soaked in water for almost 2 hours)

Sugar                               1,1/2 cup

Take a large cooking pot, add milk into it, and heat it. Grind the soaked rice with little water and add the ground rice to the milk and cook on low to medium flame till the rice is cooked and gets a little thick. Now grind the almonds with little milk to a paste form and keep aside. When the rice in the milk is cooked, add the sugar and cook for 5 to 8 minutes on low to medium flame. Then add the ground almond paste mix and also add the milk solids (Khoya) and leave a little for garnishing. Mix well and cook for 10 to 15 minutes on low to high flame till it gets thick. Turn off the flame add cardamom powder and mix well. Garnish it with pistachio, almonds, and milk solids (Khoya). Leave too cool and serve.

Kheer ka shumaar un meethon main hota hai jo k sadion pehlay subcontinent main bohat mashoor thi aur aj bhi utni hi maqbool hai. Ye har umar k logon main bohat pasand ki jati hai chahey wo mard hon ya khawateen. Khaas moqon aur tehwaar jaisay eid ul fitar aur khanay ki dawaton pe kheer to end pe dessert k tor per serve kia jata hai. Aye hum sekhtay hain k kaisay “Badaami Kheer” banai jati hai. Is k ingredients main shamil hain;

Milk                                    4 ltrs

Almonds                      200g, boiled aur 10 se 12, sliced and chhilay huay

Green cardamom         1 tsp, powder

Khoya                                 400g

Pistachio                        10 to 15, sliced

Rice                                 6 tbsp (dho kar pani main 2 hours k lye dobay huay)

Sugar                               1,1/2 cup

Aik barra cookig pot lain, us main dodh daal k garam karain. Bheegay huay rice ko thoray se pani k sath pees lain aur in pisay huay rice ko doodh main add kar dain aur low se medium heat pe garam karain yahan tak k rice achi tarah pak jaen aur kuch garhaa ho jae. Ab almonds ko kuch doodh k sath pees lain aur aik paste ki shakal main bana dain aur isay side pe rakh dain. Jab doodh k andar rice achi tarah cook ho jaen to is main sugar mila dain aur 5 se 8 minutes k lye halki se medium heat pe pakain. Ab is main pisay huay almond ki paste add kar dain aur khoya bhi add kar dain aur kuch khoya end pe garnishing k lye bhi bacha lain. Ab is sab ko achi tarah se mix karain aur 10 se 15 minutes k lye halki se tez heat pe pakain yahan tak k ye achi tarah se garhi ho jae. Ab stove ko band kar dain aur is pe cardamom powder daal k achi tarah se mix karain. Ab Is ko almonds, pista aur khoya se achi tarah garnish karain aur kuch dair Thanda honay k lye rakh dain aur us k baad serve karain.
